That really all depends on how you're boiled, and what you're boiled IN for that matter; water, oil, tar, acid, etc. Assuming it's water, is it gradually brought to boiling temperatures or are you simply dropped in like french fries in oil? With the former, it is possible to increase the water's temperature gradually enough that no discomfort is felt other than the typical symptoms of heat exhaustion (ie. dehydration, head aches, fatigue, etc.), which would be felt later down the road. With the latter, your death would be relatively immediate as opposed to dragging it out. Within seconds the nerve endings in your skin would burn out. Minutes, and the heat of the liquid would reach further into your body and begin to cook your muscles and organs, including your brain. If you're lucky, you go into shock early on and only feel the first excruciating minute or two. Freezing, on the other hand, comes with an entirely different set of problems. Now, for those of you wanting to get frozen only to be thawed out by future generations, good luck. You'd better hope to be frozen in an incredibly slow and specific way. If you freeze too quickly, the water inside your body's cells will form ice crystals that rupture the cell, killing it. But for the more realistic crowd, while it is commonplace, when suffering from hypothermia, to go from cold, to numb, to sleepy, to unconscious, and, finally, to death, scientists have found many cases which individuals have torn their own clothes off before death (leading some to initially suspect sexual assault). This is the result of a sudden burning sensation caused by the dilation of the blood vessels near the surface of your skin. Imagine it's like that tingling sensation you get when your leg falls asleep, but turned up to eleven.

Actually, it's supposed to have a terrible feeling of being burned alive right before you die. Most people who have froze to death rip off all of their clothing because of the extreme heat.

Boil implies that your skin would have to first MELT and then get to the temperature of BOILING before you would die. The freezing would be much much quicker and less painful.
